Pumpkin Treats

1. Pumpkin Spice Latte

Serves 2

Ingredients

  • 2 cups milk

  • 2 tablespoons pumpkin puree

  • 1–2 tablespoons sugar or maple syrup

  • ½ teaspoon pumpkin pie spice

  • ½ teaspoon vanilla extract

  • 2 shots espresso or ½ cup strong brewed coffee

  • Whipped cream, for topping

  • Extra pumpkin pie spice or cinnamon

Directions

  1. Add milk, pumpkin puree, sugar, pumpkin pie spice, and vanilla to a saucepan.

  2. Warm over medium heat, whisking until hot and well combined. Don't boil.

  3. Pour into two mugs and add espresso or strong coffee.

  4. Top with whipped cream and a sprinkle of pumpkin pie spice.

 

2. Pumpkin Cream Cold Brew

Serves 2

Ingredients

  • 2 cups cold brew coffee

  • ½ cup heavy cream

  • 2 tablespoons milk

  • 2 tablespoons pumpkin puree

  • 1–2 tablespoons maple syrup or sugar

  • ½ teaspoon pumpkin pie spice

  • ½ teaspoon vanilla extract

  • Ice

Directions

  1. Combine heavy cream, milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla.

  2. Whisk or use a milk frother until slightly thick and creamy.

  3. Fill two glasses with ice and pour in the cold brew.

  4. Spoon the pumpkin cream over the top.

  5. Sprinkle with a little pumpkin pie spice and enjoy!

 

3. Pumpkin Spice Cinnamon Rolls

Makes about 12

Ingredients
For the rolls:

  • 1 package refrigerated cinnamon roll dough, or your favorite homemade dough

  • ½ cup pumpkin puree

  • 2 tablespoons brown sugar

  • 1 teaspoon pumpkin pie spice

  • ½ teaspoon cinnamon

For the frosting:

  • 4 oz cream cheese, softened

  • 2 tablespoons butter, softened

  • 1 cup powdered sugar

  • ½ teaspoon vanilla

  • 1–2 tablespoons milk

Directions

  1. Heat oven according to cinnamon roll package directions.

  2. Unroll the cinnamon roll dough.

  3. Mix pumpkin puree, brown sugar, pumpkin pie spice, and cinnamon.

  4. Spread the pumpkin mixture over the dough.

  5. Roll the dough back up and cut into 12 rolls.

  6. Place in a greased baking dish and bake according to the dough's instructions, until golden brown.

  7. Beat together cream cheese, butter, powdered sugar, vanilla, and milk until smooth.

  8. Spread frosting over warm rolls and serve.

 

4. Pumpkin Bread

Makes 1 loaf

Ingredients

  • 1¾ cups all-purpose flour

  • 1 cup pumpkin puree

  • 1 cup sugar

  • ½ cup vegetable oil

  • 2 eggs

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1½ teaspoons pumpkin pie spice

  • 1 teaspoon vanilla extract

  • ¼ cup milk

  • ½ cup chocolate chips or chopped pecans (optional)

Directions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.

  2. In a bowl, whisk together pumpkin, sugar, oil, eggs, vanilla, and milk.

  3. In another bowl, combine flour, baking soda, salt, and pumpkin pie spice.

  4. Gradually stir the dry ingredients into the pumpkin mixture until just combined.

  5. Fold in chocolate chips or pecans, if desired.

  6. Pour into the loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  7. Let cool before slicing.

 

5. Pumpkin Cookies

Makes about 24 cookies

Ingredients

  • 1 cup pumpkin puree

  • ½ cup butter, softened

  • ¾ cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1½ teaspoons pumpkin pie spice

  • ½ teaspoon salt

  • ½ cup chocolate chips (optional)

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. Beat butter, brown sugar, and granulated sugar until creamy.

  3. Add pumpkin, egg, and vanilla and mix well.

  4. In a separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.

  5. Slowly add the dry ingredients to the wet ingredients.

  6. Fold in chocolate chips if desired.

  7. Drop spoonfuls of dough onto the baking sheet.

  8. Bake for 10–12 minutes, until the edges are lightly golden.

  9. Cool and enjoy!
